Blend of grapes and ripening:
Bollicine (sparkling wine) made by high-hill grapes (380m asl). Assembly of 6 different selections of the same vintage. Passage of 15% of Reserve wine in French oak barrique barrel of a different vintage. Refermentation in bottle for over 36 months on the lees. Remuage made by hand. Pressure of 6 Atm. Natural acidity of 7,5 g/l (expressed in tartaric acid).
Organoleptic Characteristics:
Bright straw yellow colour with golden reflections, delicate and persistent perlage. Slight notes of wood and Vanilla, skillfully merged. The nose offers an elegant bouquet with hints of brioche, patisserie and white flowers. Subtle fruity aroma and armony, remarkable persistence and “freshness” thanks to its important acid vein of 7,5 g/lt. A typical citrus and lime-like note is delivered under the yeast notes, which distinguishes this Franciacorta. Ending in a persistent and soft note of almond inviting to sipping.
Food matching
Suitable for Aperitifs and first courses also elaborated, with mellow taste. Thanks to its excellent structure and minerality it perfectly matches with fish (also fat) and shellfish, or to sip throughout all meals.
