Sparkling bubbles made by grapes of high hills (380 t above level sea) 85% Chardonnay of just ine selection and 15% pinot bianco.first ferment just in stainless steel. Second ferment in bottle for more than 30 months on yeast. Remuage done absolutely by hand. Soft pression of just 4 atm. Natural acidity of 7,5 g/lt (according to tartaric acidity).
Color brilliant straw yellow with golden reflexes,soft and delicate perlage. Imperceptible fragrances sapientially mashed up of vanilla flavour and chamomile flowers. Fragrance of an elegant bouquet with perfume of bread, pastry,white flowers and rubinia flowers. Nicely fruity and harmonic, remarkable persistence and freshness due to important natural part of 7,5 g/lt. Under the notes of yeast there is a pleasant citrus taste and lime typical of this Francia corta wine. Finish pleasantly smooth and with persistence of Acacia's honey that invites to drink.
You can serve it for appetizers and soft first dishes. Thanks to the excellent structure and light minerality you can serve it perfectly with lake fish and shellfish. Great for happy hour with your friends.
